Shibata Black Yuzu 200ml
A refreshing, sweet and tart yuzu-infused sake made with all estate-farmed organic yuzu fruit and a clean and aromatic Junmai sake base, made using a rare rice varietal Ginpu from Hokkaido and local exceptionally soft Kanzui water. The yuzu is squeezed with the skin left on, thereby allowing for the juice to not be too sweet, with an added touch of tartness.

Shibata Pink Junmai Ginjo Nigori 200ml
Shibata Shuzo was established in 1830 in Okazaki City, Aichi Prefecture, and is currently led by the Shibata family’s 8th generation President. The village is called, “Kanzui” or “God’s water.” The water itself is outstandingly soft (water hardness of 0.2), and is one of the softest waters in all of Japan. Shibata uses this Kanzui water for every step in the sake production process, including for Shikomi Mizu, or preparation water. Led by Shizuka Ito, one of very few female Toji (brewery master) in Japan, Shibata sits at an elevation of 350 meters above sea level, and thereby benefits from cool summers and extremely cold winters.

Since the naming of the brand Kamotsuru in 1873, this brewery has been at the forefront of rice polishing technology, and since the Meiji era has pulled the industry forward as a sake pioneer. In the Taisho era they were the first to receive an honor for their work. And again, 50 years ago, they were the first to sell Daiginjo-grade sake to the public. Kamotsuru company receives a large number of awards and honors for their sake. They devote their craft to producing sake of exceptional quality.

The only pasteurized Spring seasonal sake of 2023, Jozen Hanami is classic, spot on, superbly delicate, and very affordable. Shirataki is a fairly large brewery, but still doing the right things: committed to local rice growers, committed to environmental sustainability. The economy of scale allows them to offer such a high quality brew, at such a reasonable price.

Delicate, floral character with notes of watermelon, strawberry, white mochi and Spring flowers. On the palate it’s super smooth and soft with really low acidity– it travels across the palate like a ripe white peach, or melting cotton candy. The finish is dry, but the mid-palate makes you feel like a child surrounded by falling petals.

This is for TONARI at Uroko. Great omakase in a limited seating setting. 12 courses with a sake pairing. The sushi was very good and presented well. The sake pairing was very good! Even though the dinner was quick (limited to an hour) it was good and priced accordingly. Only wish would be to take one of the five daily seatings out to extend the dinners so the delicious food is better appreciated and settles in the stomach better.

Amazing Omakase experience, 10/10 would recommend. The sushi chef was very friendly and answered all the questions I had. As for the sushi, wow, I am truly speechless. Each piece of the 12 course meal was unique, full of flavor, and highlights the freshness of all the ingredients used. This experience is 100% worth it and a steal at this price point.

I’m not much of a sushi lover. I brought my boyfriend here because he’s the opposite. He loves sushi so why not omakase? Let’s just say at the end of the evening, he was depressed to leave. He’s had omakase before and even sushi in Japan, however his exact words were, “that was the best sushi I’ve ever had.” I think that says a lot. Haha. As for me, as I said, not too big into sushi. However, I can equally say the same thing. Each piece was perfectly crafted and thought out. The flavors were well balanced and overall it was absolutely delicious. I applaud the sushi chef and everyone there. It was an honor really and an experience I won’t forget. Every cent is worth it. I can’t wait to go again.

Been coming to Uroko for over 3 years now and there’s a reason why we keep coming back – the food is always great. We’ve done omakase a few times and the temakis to go probably 30+ times . So much respect for the Chefs who are so passionate and dedicated. Wish them continued success.
