We source from First American and local farms in Oklahoma and the surrounding states as often as possible. OKC, you lucky SOBs. What a treat to discover such an extraordinary restaurant and museum. The food was crafted with care and bursting with flavor. I ordered the corn ribs as an appetizer. The presentation was amusing and the taste delicious. They are not to be missed. The BBQ Bison brisket was succulent and flavorful. The bun was perfectly toasted and buttery. For desert, the Southern Crisp Blackberry cobbler. Served hot and crispy. Everything was divine. Check this place out before it’s not a secret anymore.

This restaurant is located inside the First Americans Museum. It offers a few traditional foods, like Indian fry bread. A full service bar is available. On the day I visited, they closed at 2 pm so you want to keep that in mind if you are also visiting the museum.

We went during restaurant week. We made a reservation and had no wait time getting in at our 1 pm reservation. Service was fast and the waiter is very courteous. We ordered the cornbread appetizer with the Bison bacon sandwich and Bison burger. For dessert, we got the Crème Brûlée . The burger had an option to substitute regular fries for the garlic and sage truffle fries. We got those and I highly recommend the substitution. The flavor is delicious and had an extra kick than regular fries. The crime brûlée was amazing, it had a nice blend of flavors, the texture of the granola and pecan flavors with the brûlée added the perfect touch . The cornbread had a nice savory taste with a hint of subtle sweetness. The burger and sandwich are very good as well. Featured pics are the crème brûlée and cornbread

I REALLY wanted to fully enjoy this experience. I was incredibly excited about the focus on indigenous ingredients. Alas, there are some definite growing pains. I’ll start with the good. The burger is REALLY good and creative. Pickled squash, red onion, and zucchini were really delicious, as was the use of the arugula. The only thing we thought was since bison is such a lean meat, cooking it to medium or medium well would have been a better choice, to keep it juicier. The flavor was definitely there.
