The maguey Papalometl is named in Nahuatl for the butterfly (papalotl), Scientific name: agave Cupreata and looks like a giant Tobala. Distillation takes place in a stainless pot with a clay condensor and Carrizo (Mexican bamboo) tube. Earthy, dark and delicious. The nose is like sinking into a rich leather chair. A palate of leather, slate, a hint of black olive and meatiness. A medium long finish starting with slightly sweet notes of dark dried black cherries that gives way to an earthy, savory mushroom.

Del Maguey is a collection of twelve villages in Oaxaca. The common word for agave in Oaxaca is maguey. Del Maguey Azul is made from 100% blue agave harvested 7 years after planting. The agave is earth-roasted over hot stones in a conical pit for 3 to 8 days. Crushed using a horse-powered stone mill, it is then naturally fermented in wooden vats for 14 to 30 days and twice distilled in a 350L copper still.Spicy, fruity and smoky nose with a high note of citrus. It is creamy, smooth and warming to the palate with a clean finish.

Los Vecinos del Campo Espadin is produced in the Valles Centrales region of Oaxaca by a group of 10 master mezcaleros who use time-honored processes passed down by their ancestors to distill the small batches. The mezcaleros use locally grown and harvested agave Espadin and roast the agave pinas underground. The pinas are crushed using a stone molino, naturally fermented in wooden vats, and then double-distilled in copper pot stills. This mezcal is spicy up front and moves quickly to tropical fruits, ginger, and roasted peppers.

Nuestra Soledad Lachigui is made by master mezcalero Pedro Vasquez in Lachigui, Maihuatlan. This mezcalero also makes some of the El Jologorio mezcals that use wild agave, and this is his farm-grown agave Espadin. At 49% this mezcal is strong, but the alcohol does not overpower it. It has some unique flavor notes not found in other mezcals made from agave Espadin. It has notes of ripe grapes, smoked tropical fruits, and pine wood.

100% agave espadin mezcal. Toasted corn (elote) is added to the spirit after its second distillation. After days of infusion, the roasted corn is separated and the mezcal is distilled for a third and final time. Vago Elote has a nose full of smoky toasted corn and dry river stones. The body is sweet with wood tones and layers of honeycomb, green tropical fruit, and smoke. It has a prolonged finish loaded with mint and papaya.

I was very disappointed in my visit to this location. We have frequented the Lafayette location many times and have never had an issue. We decided to try out the Arvada location since we wanted to walk a little in old Towne after dinner. We had a reservation for 7 but did get there about 20 min early. We were greeted by a younger blond gal. She said we can go ahead and seat you early but go ahead and seat yourselves. Just walk straight back, it’s the only table open. She wasn’t very pleasant or friendly. I said ok…and as we walked back there were 2 tables open so we were very confused where to sit. I eventually sat down at the 2 top and I guess it was the right one since we were served. The table was so tiny and barely had any room between the people behind us. It was super uncomfortable. We were greeted by our server who was kind and attentive. She is the only reason for the 2 stars. We ordered the shishito peppers and chicken quesadillas for an app. The quesadillas were stuck together and super mushy. The peppers were also mushy and had no bite whatsoever. I ordered the cotija cheese taco and ahi Tuna taco. My bf ordered 2 pork belly tacos and the tilapia taco. Both of us were so disappointed. We’ve never had bad tacos at the other location. The piece of tuna I got was so tiny, the cotijia cheese on the taco wasn’t cooked into the tortilla like normal, and the pork belly was all fat and was tough. I have no idea what is going on at this location but it was so so disappointing. Our drinks were good but they did take awhile to come out. The Panna cotta was super delicious. It was the best part of the night. Our bill with tip and tax was $89 and wasn’t worth it at all. We won’t be visiting this location again. Management needs to have a training session with the hostess, and find out what happened with the food that evening.

Delicious food, and great drinks. I highly recommend the prospector cocktail if you like light, cucumber, flavor. It was perfect for a summer night. All of their tacos are delicious, but I love the birria Tijuana style.

Great food and lovely atmosphere! A comfortable spot especially when the outside doors/patio are open. A little pricey, but delicious. The salsa selections were distinct and paired well with the crunchy chips. The Birria De Res was filling, fun to eat, and flavorful. The Banana Brulee was light, sweet, and the strawberry ice cream tasted homemade.

We stopped here for our anniversary dinner this year. We are so glad we did. The food is amazing,the drinks are so good you want more and the staff was attentive and kind always. We will 100% be coming back and telling everyone we know.

My favorite steak tacos and the adobo tuna dish is great. Both are destination meals..which means you go for that dish. Well made and reasonably consistent margaritas on tap. Get the chili rim. My only knock is they have no cointreau. Every good latin restaurant needs a coin style marg option.

Plenty of vegan/GF options and the food is delicious. They have a diverse cocktail menu. The staff is super attentive and nice. Lots of indoor and outdoor seating. Unfortunately severely limited parking.

I used to love this place. I invited my friends here for cinco de mayo and was so embarrassed after the service and food we received. I’ve been here 4 times and the portion of food is severely different every time. Our waiter, Vincent, charged us $3.00 for asking for more tortillas after only receiving 2 to begin with for the birria de res. First time we’ve been charged for extra tortillas. We ordered pickled jalepenos and our waiter gave us fresh jalepenos instead which arrived 10 minutes after the food it was meant for and then charged us $1.00 for them. We ordered three orders of churros and only received two. The churros we received were burnt and just down right awful. Three of our party ordered carne asada and weren’t asked how they liked their steak cooked- it came out not to their liking.
