We are a family owned and operated BBQ food truck officially open for business Spring 2021. We offer brisket, ribs, sausage, pulled pork, smoked turkey legs, chicken and boudin. We have sandwiches, plates, or meat by the pound. Homemade bbq sauce, potato salad, baked beans, and a special rice, red bean and sausage side dish knows as Jagacida completes our menu for a perfect blend of savory, sweet, spicy and satisfaction. Our meats are slow smoked and seasoned to perfection following a long held Hollie family history of Barbecueologists. Our barbecue method is a tribute to the Hollie family reputation for simply spectacular barbecue.

First- timers . Good experience. Food was fresh , hot and delicious. The young lady that took our order was friendly and polite . I got the pulled pork sandwich and my husband got the chopped beef plate and added sausage with jagacida and potato salad . I can’t eat spicey food and asked if the sausage was hot. I asked to try a piece and she quickly said yes and let me try it . (It was too hot for me ) so I chose the pulled pork . I also sampled my husband’s jagacita & potato salad . Good It will not be our last time ! Oh , I almost forgot …..I loved the BBQ sauce !!!

Ok so uh, I was looking for a BBQ spot in palestine, and well this is the ONE. Baked potato isn’t for the weak, it comes hard. The flavors, all of them are there, the Brisket is tender, sauce is great. The jagacida isn’t a side, it’s a meal, great flavor, the only problem is 16oz isn’t big enough but I’ll order 2 next time. Really nice people and great service, it’s a food trailer don’t let that stop you from eating there it is great

Wow the reviews don’t lie!!! I travel all over and I’d say this is top bbq deliciousness! Had the 1/2 rack and combo plate. Just go you’ll be glad. Everything is absolutely amazing. Well be back for the stuffed turkey leg! Coolest people around!

Crystal and Jose did an amazing job helping me with my daughter’s last-minute wedding. They were professional, responsive to my needs, and most importantly, they delivered the best-tasting food! Our guests were so complementary of the taste and variety. They could have just delivered and walked away, but they set up all the food and arranged all the trays.
