Ramen Shoten is one of the food vendors located within Eat Street Crossing: the newly opened, locally led food hall on Nicollet Avenue. This was my first trip to Eat Street Crossing and I had Ramen Shoten squarely on my radar because it’s run by Chef John Ng and Lina Goh of Zen Box Izakaya. And Zen Box is one of my all-time favorite restaurants in Minneapolis.

The menu is relatively limited (which is the only drawback) but their ramen is quite good–I got the “Mr. Rooster”, and it very much had an earthy, street-food, workin’ man’s feel to it which i quite enjoyed (and their ajitama was absolutely delectable). Their service was also comparably quick–I was the last of my party to get to Eat Street Crossing, and the last to place an order, but got my food first. So they definitely get a win for that.

Great service, food looked amazing. Very disappointed with the lack of flavor. There was no depth or complexity, chicken was incredibly bland and boring. Was expecting a lot more. Gyoza were good but nothing to write home about.

I ordered the Red Phoenix ramen and asked how spicy it was. They put the chilly oil and miso paste on the side for my personal preference. It was soooo good!!!

We tried the Red Phoenix Ramen and Chicken Gyoza. For me, the only good things about it were the presentation, the eggs were perfectly gummy inside, not overcooked, and the noodles were pretty good. This place was a 2/10 for me and possibly some of the most disappointing ramen I’ve had in the cities. Broth was just okay, and there was waaaay too much sesame oil in it. The chicken was just cold unseasoned chicken breast. I was bored and wish the spice ball had more kick to it. The only broths they have are chicken or mushroom. Gyoza was nothing to write home about but nice presentation. I was most excited to try this spot of all the restaurants in the food hall and was also the most let down. They did just open though, and I will try it again in a few weeks to see if it’s any better.

This place does chicken ramen right. It’s lighter and more clean taste than pork ramen so be ready for a different taste than any other shops in the city.

Still thinking about this ramen two weeks later. Broth was especially delicious – I wish they had a few more varieties but I loved the chicken. ESC’s atmosphere is charming and staff very helpful- will be back soon and happy to have this place in the neighborhood.
