So.. My gf and I each got a pizza. She got a gf one, and I got a lg with dairy free cheese.. The total was $62.. and the crust is desperately thin, barely any sauce (I got a white pizza, see pictures), and SO not anywhere near being worth it. It’s the most expensive pizzas we’ve ever gotten, and I’ve gotten pizza in NY, CA, etc.

I’m not sure why these guys don’t have 5 stars across the board! The pesto pizza and the white pizza are amazing! They have the best cannoli I’ve tasted in a VERY long time (and I’m Italian from NY). Service was prompt, followed up, and was not pushy. I work right around the corner and will be there more often than not for lunch!

We truly enjoyed our dine-in experience here tonight. Our server, Megan was helpful and friendly. Her honest recommendations were spot on. We started with a Cease salad and a tomato and mozzarella as appetizers, followed by the Pontiff Pie with added prosciutto. The craft of making thin crust pizza that is tasty and holds shape is an art. This is an artfully special restaurant that deliver on style and taste. I highly recommend it. Besides, being able watch the “pies” being made fresh is also fun!

I would rate it lower if the pizza was bad as my issue is with the owner. I went here on my birthday as the Broomfield location is far away from my house. I brought a small cake as it was homemade and they charged us for the cake we brought in. Had they told us beforehand I’d be fine, but this was unnecessary

We have been going to Protos Broomfield for more than 10 years now. Today, we tried the Boulder location. The pizza was great as always, but super annoyed with the owner’s policy of charging our family for my homemade cake?! A dessert charge? And I told the server as soon as we arrived that I had a little cake with us since it was my son’s birthday, and she did not mention anything at that point. When we got the bill, that was the charge for dessert. Not good. I was just at the Boulder Cork a month ago for my own birthday and we brought our cake as well, nothing was charged, and the manager even brought us plates, utensils and sang happy birthday with us.

The pizza was good, but the ratios were not ideal to my preferences. With taking pizza to go they will give you containers of parmesan cheese and crushed red pepper to take with you. The parmesan they provide is very good!

Excellent for solo dining at the indoor bar with open air garage door to the patio. Walking distance from holiday inn and craft brews on tap. Friendly staff. Will definitely drop by again. House salad, brick oven pizza, cannolis, cappuccino and IPAs. Good stuff!
