It’s been a lot of years since I’ve visited Nimo’s sushi. 20 years ago he told me that the most important part of sushi is the rice. I can honestly say Nimo makes the best sushi rice in town. The fish quality is outstanding. The Yellowtail belly is a definite winner – so is the Bonito, Toro, sweet shrimp, etc. I’ll be back to get through the rest of the menu.

Best *authentic* sushi in town. You will pay a little more and the servings will be smaller but this is what sushi and sashimi are meant to be. If you’re like me and don’t really like your “sushi” to have sauces and jalapenos and crispy onions in it then you’ve probably been looking for a place like Nimos.

Had a dinner date here with my boyfriend; he liked the Japanese beer, I had a white wine. Next time we want to dive more into the sake options! The steamed dumplings (Shumai) and the sushi were the best I have ever had in Colorado! Everything was handmade to order, and it was perfectly crafted. Rolls are smaller than you’d find at a more commercial sushi restaurant, so be sure to order a variety of rolls! The staff were very nice and attentive, and the service was fast despite the quality. Would recommend calling ahead to reserve a table on weekend nights. Looking forward to our next visit!

Nimo’s is a unique find in Colorado. Authentic Japanese sushi that is best appreciated for the simplicity and quality. Not a place to go to if you want rolls or American style sushi. My husband and I love sushi and there is simply no other place like Nimo’s that we have been to in Fort Collins.
