Pre covid version of ourselves: deadhorse hill is a seasonal american restaurant located on main street in downtown Worcester. A restaurant inspired by the New England landscape. We rely on the hard working farmers throughout the northeast and the fishermen along the coast to provide the best possible food at the table.
In the evening the dining room offers a prix fixe menu that speaks of the season, varying based on the availability of ingredients.

A former hilltop hotel houses a rustic-chic New American dining room with daytime cafe & coffee bar. Based on 695 reviews, the restaurant has received a rating of 4.6 stars. Price $$$

Blend of 55% Cabernet Sauvignon, 30% Merlot, 10% Cabernet Franc and 5% Petit Verdot. 13% alc ///. Aromas of toast and ripe black cherry emerge from the glass, with a fragrant, peppery nuance. The palate shows plenty of appeal, with succulent dark stone fruit and cherry to the fore in a mid-weight frame. There is a lovely sense of freshness; gentle textures and good underlying tannic structure here. This is a well-poised ripe St.Estèphe that exhibits a fine sense of balance for its level.

PROFILE: This is a golden color wine with an amber hue, which becomes even richer as it ages. The bouquet is intense and persistent, delicate and floral with a clear hint of almonds and a scent of toasted hazelnuts as the wine matures. Distinct notes of sea salt and a surprising acidity round out the finish. WINEMAKING:
30-40 hectoliters per hectare. Spontaneous fermentation. Soft pressing. Temperature controlled fermentation. Aged under the flor in oak and chestnut until the flor dies. It is then blended with other batched from that vintage and aged for a total of 10 years. No fortification is used, the alcohol rises naturally through evaporation.

2020 Riesling Balthasar Ress, Trocken, Reinghau Germany. // Crisp, lean, and delightfully off-dry. This is not a sweet wine, just a slightly sweet one. The difference is quite important. Often, people say they don’t like sweet wines. Well, yes, I wouldn’t eat Sauternes with my taco either. There is a big middle ground between Coca-Cola and club soda, right? Think orange juice… This is a wine that has an aroma of lemon, pear, peach, but also sugar snap peas, mint, and wet slate. This is a mineral driven wine that jumps off your palate, but delights it with just a tease of sweetness.

Biodynamic. The Château de la Carizière in Haye Fouassière dates to 1926. Jo Landron took over the estate’s vines in 1998, and immediately began converting the vineyard to organics. The vineyard covers 10 hectares of orthogneiss terroir, planted with vines aged between 55 and 70 years. This wine is drawn from four hectares, where the yields are strictly curbed as low as 38 ha/hectare. Harvested by hand and fermented with wild yeasts, the wine aged on its lees for 10 months before bottling.

PROFILE
Very savory, salty, textured. This wine is unique to say the least. The aging under flor is definitely discernible, but not overpowering. Aromas of citrus are present, but not dominant. Instead the wine smells of grain, sea salt, dust, and apple skin.
WINEMAKING
The grapes are 50% direct pressed (for low pH levels and higher acidity) and 50% short-macerated (for fruit and body). After initial fermentation, the wine is 100% aged under naturally developed flor in barrel for 14 months. The flor forms naturally due to wild yeasts in the ambient atmosphere and is aged on its lees the entire time.

Johannes Zillinger Velue Riesling
‘Velue’ is the old name of the town where the Zillinger farm is based. Vines for this bottling come from an eastern-facing slope, the average age is 30 years-old. Spontaneous fermentation occurs in stainless steel tank, and the wine stays in contact with the lees for five months, with occasional batonnage, bottled unfined and unfiltered. This Riesling is incredibly vibrant; the nose is racy and redolent with stonefruit, mirrored on the palate as juicy nectarine, underripe peach, with tangy tangerine and mango. Bright and lively and a great introduction to the estate.

2020 Trebbiano Spoletino from Leonardo Bussoletti from Umbria Italy // Within Umbria, Trebbiano Spoletino has been overlooked by most producers until recently, with an aray of styles now being produced. Leo’s is our favorite, and whether that a biased opinion or because this is the best of his amazing line of wines, the bottle is simply wonderful. Round stone fruit with hints of mint and anise, the wine ferments and ages for 6 months in large French oak, but not overoaked nor oxidized like many of the local producers’ versions.

Micro-negociant, Olivier Richard, created the Lucien Raymond label as an homage to his grandfather, a winemaker in the Rhone who had apparently always harbored a secret desire to make great Sancerre. Richard sourced the fruit from a Biodyvin-certified grower with holdings across the region.

“…this wine displays a surprisingly layered texture given the wine’s age and price point. This we’re told, owes at least in part to the full southern exposure of the source vineyards; the wine is not aged in oak, but the lees aging and full ripeness gives the wine beautiful weight on the palate. In the glass, it’s a medium yellow-gold moving to a silvery rim, with aromas that couldn’t possibly be more spot-on: white grapefruit, green melon, peach pit, honeysuckle, and green mango peel balanced by mineral notes of sea salt, herbs, wet stones, and crushed chalk…”

Rattlesnake Hills AVA — Zillah, WA

Sauvignon Blanc and Semillon were pressed directly and aged in neutral French oak for thirteen months to produce this ode to Bordeaux. The Rattlesnake Hills AVA is our favorite region for Bordeaux varietals because it gets so much sunshine during the day, but the grapes retain freshness and acidity because of the colder nighttime temperatures. The Sauvignon Blanc from here shows the riper side of the grape without all of the typical green varietal associations while the Semillon infuses a dense, honeyed element. A golden elixir of green apple, elderflower, white peach, and fig.

PROFILE
A bit floral, round, approachable. Aromas of melon, white peach, yellow flowers, and crushed rock start off powerful, but fall back on the palate to a more smooth, silky, yet still crisp flavor profile. This wine is very reminiscent of the powerful and complex style of Chateauneuf-du-Pape Blanc.

Fermentation and breeding in ceramic amphora for 4 months doing the work of mothers, to extract volume in the mouth and make the wine more silky. It is not filtered or clarified, so it is normal that it is not completely transparent and has some turbidity. //
We worked with the least intervention to make it as authentic as possible and we managed to get the most out of the variety. //
It has an electric but creamy acidity with fruit on the nose and above all these aromatic dried herbs (chamomile, fennel) are distinguished both in the nose and in the mouth.

Grapes: Carignan Blanc (75%), Roussanne (15%), Carignan Gris (10%)
Profile: Lots of peach skin,
orange, and hazelnut notes. The wine has a full bodied feel with lots of texture.
Grape Growing: The vineyard from which the Carignan Blanc and Gris
are harvested is one of Daniel’s oldest. These two white grapes,
distinguishable only after veraison, are complanted. The Roussanne
vineyard is a younger one, at 25 years old.
The wines were harvested whole bunch and underwent primary and malolactic fermentation in steel tanks. The wine sat in
contact with skins for a total of 3 months. After this period, the wine was
aged in clay amphorae for 6 months, and then an additional year in old
wood barrels. This is a traditional orange wine that Daniel
decided to produce from only select bunches of Carignan from his oldest
vineyard. The Roussanne was added due to its especially thick skin and
aromatic properties.

Named for Luigi’s mother Maria Teresa, this is one of our favorite finds from a very remote part of Campania. PROFILE
the wine has a ripe Meyer lemon aroma enhanced by fresh herbs and a bit of balsamic. On the palate it is a dry wine with moderate acidity, medium body, and is marked by the presence of elevated tannins that give the wine structure. In flavor it has elevated intensity with citric nuances, ripe white fruit + an extended finish marked by a pleasant tannic sensation. The wine was fermented with indigenous yeasts from the vineyard itself. It spent 3 months in contact with skins, and a total of 8 months maturing in clay tinajas (basically, smaller amphorae).
MORE ABOUT THE WINE
Pinomar is a wine made with yeasts influenced by the warm Mediterranean on shore winds. The use of Merseguera adds to the intriguing aromas of riper citrus to the wine.

Benjamin Taillandier Laguzelle is a red natural wine from Languedoc, France, made from Cinsault, Syrah, and Carignan grapes harvested by hand. Few days of cold maceration, natural yeast, aged 6 months in stainless steel. The wine is savory with notes of garrigue – Mediterranean bushes characteristic of the area. Medium-bodied but very easy to drink and relatively low in alcohol content. Definitely not a warm mouthfeel, but rather refreshing.

Classic earthy undertones are present as well as a mix of bright red fruits, darker woodsy berries, and even flowers. Earthy dishes (mushroom ravioli, black truffle), The wine is mid weight with great acid and freshness so it will pair well with a steak but also leaner dishes, preferably with a little earthy funk to them.

Fabien Jouves Cahors Mas Del Périé
Fabien Jouves is from an old peasant family. He became a winemaker in 2006 by creating the Mas del Perie on the highest slopes of the Cahors appellation. Malbec, or Cot as it is known locally, is the king of grapes according to Fabien who strongly believes that in the right location, it can produce some of the most exciting wines on the market.
The wine is 100% Malbec grown on a mix of clay and limestone with gravel top-soil. The harvest is carried out manually and fermentation done in concrete vats, this is then followed by a 10 month period of maturation on fine lees.

The wine needs time breath as it is a bit tight out front with tart fruit, floral notes, and hints of orange blossom. Give the wine time and it truly opens up. Again, this style is not that overly intense and tannic Sangiovese, so please don’t expect that. Instead, it is elegant and all about finesse.

La Segreta ‘Freghino’ from Umbria, Italy. 1 Liter bottle size. // Freghino Varietals : Sangiovese 92%, Malvasia Nera 4%, Colorino 4% //
NOTES:
Affectionately referred to as “teenage scoundrel”, the Freghino is the youngest red wine from La Segreta. As with all of their wines, there is still this classic, rustic, Italian red feeling here. The wine does have bright wild red fruits and noticeable acidity, but there is this underlying grip and earthiness that makes this wine unmistakably Italian Sangiovese. // Manual harvest, selection of only the best grapes, and a very healthy vineyard site are all a focus here. Compared to three weeks of skin contact for the Pottarello, the Freghino is on the skins for 12 days. The wines will undergo “follatura” or manual punch down, in order to extract the right amount of color and tannin from the grapes. There’s about 9 months in French oak before another 6 in steel and then release.

A wave of black fruit nearly overwhelms the palate with a sensation of sweetness. This sensation is met with alcohol and tannin that nicely balance the wine. This is the better way to drink Amarone! Brecciaro comes from Bussoletti’s two principle sites (Sangemi and Colle Ozio) that are within a few kilometers of each other. Soil varies from the two sites from heavy clay to calcareous/rocky. The wine undergoes a spontaneous fermentation and 70% will age on the fine lees in stainless steel, with the remaining 30% in 25HL French barrels. Bussoletti is attempting to create a Pinot Noir style wine. It is elegant, with a tannic note and plenty of typical red fruit that is often associated with Ciliegolo.

Wow! It is rare we go out to a meal and wonder… “ when is the last time I had such good food?” The only thing I didn’t like about this place is the name. We were a party of three and we each ordered different things from the menu (squash risotto, pan seared chicken, short ribs, Cesar salad) and everyone thoroughly enjoyed their meals. We exchanged bites with each other and everyone agreed: each was equally fantastic. Service and help pairing meals to drinks and dessert was thoughtful, patient, accurate and we never felt rushed. The peanut butter sorbet and chocolate chip combo = magic! Highly recommend and wish we were local so we could enjoy this restaurant regularly. Tip: we arrived at 5:30 or a Saturday and were seated right away. A long line of hopeful diners that had to wait began to form about ten minutes later. As far as I know, they don’t take reservations so go early (although it is definitely worth the wait!)

I went for dinner here earlier… and now it’s 3 in the morning & I’m deeply upset that my date has our leftovers. Everything was phenomenal… I’m a picky uneasily amused Kurt cobain about restaurants. Been everywhere… seen all the crazy things… this place just does sophisticated chill better than anyone else— with food and service to exceed expectations. I’m (again) genuinely UPSET that my date took both of our leftovers home. & feel inclined to compliment all staff + curators of the menu & owners … plus — yes I recommend. Don’t necessarily want this spot to become too crowded— but the owners would deserve the business 100 percent. Happy. Satisfied. Was treated well. The expectations I have of a good dining experience were all met and I will be back for another plate of black pasta tomorrow…. With a new date lol. Cheers

It’s hard to put into words how great Deadhorse really is. The most personable staff I’ve ever witnessed. The absolute pinnacle of fresh made food with finesse. The menu is constantly changing and evolving with the seasons and typically inspired by whatever is freshest. The cocktails here cannot be beat. Always well thought out and executed flawlessly. Their wine selection is stellar as well. You can’t go wrong here.

You will not have a better meal or experience. If you have major dietary restrictions you might have a hard time finding something (their menu changes frequently) but even as a life long vegetarian it’s amazing. Highly highly highly recommend.
