ChoLon translates to “big market” in Vietnamese and is named after the largest Chinese-influenced market in Saigon. Fittingly, it also includes Chef Lon Symensma’s name, who opened ChoLon in Downtown Denver in 2010, following his extensive culinary travels throughout Asia.

After many years of evolution – including eight years on the 5280 Top 25 Restaurants List and being named a James Beard finalist for Best New Restaurant in America – Symensma and business partner Christopher Davis-Massey opened a second ChoLon location in Eastbridge.

At the helm of the new concept is Executive Chef Becca Henry, who started as a line cook at ChoLon’s downtown location in 2012 and assumed the role of Executive Chef in 2019.

Had a very good dinner last Friday with Andrea who took good care of us. Highlight was the kaya toast which is a nice spin on the traditional version with an egg foam instead of softboiled. We also really enjoyed the chix sliders which were nicely spiced and very crispy. Malaysian noodles were also good with a decent char and smoke flavor and plenty of shrimp. A little over priced we thought for the amount in the bowl. The 36 chambers was nice if a little over sweet. Still the sesame wash on the shochu was very present. Only complete miss for us was a new menu item the fried shrimp roll. Rice was gummy and slightly overcooked, not much flavor on the not quite hot enough shrimp and the sauce on top was so sweet it just overwhelmed the bite. Tried dousing in soy sauce to bounce back the sweet and it did not help. Hopefully they can fine tune this, but was not good in present state.

We visited Cholon, Central Park over the weekend and I couldn’t wait to check it out; this was my first time dining at the Central Park location. Cholon has my death row meal and trust me when I say there is nothing like their French Onion Soup Dumplings (we frequent the location in Denver).

Warm lighting as your greeted by a friendly hostess. tables and bar seating. reservation highly recommended. we ordered the yuzu salmon roll x3. smooth and blended flavors all came paired with ginger and wasabi. ginger was different but in a good way. started with the kaya toast, excellent flavor combo and surprisingly i didn’t order more. got the famous french onion soup dumplings. i recommend to try but i wouldn’t say they are to die for. got the fried chicken. huge portions and juicy pieces. it is brined, marinaded and breaded and fried twice. the sauce is key ! the general cho’s soup dumplings are very good i would have continued to order more if i wasn’t full. drink menu is asian forward but excellent choices. pricing is on the higher side, could be the only con. quality meals with an expensive look.

Food was very very small portioned. Picture is 2 orders of soup dumpling and 3 orders of beef skewers during happy hour. Sign outside said best dumplings in Denver… I really hope this isn’t true; I’ve had frozen dumplings that were mich better. Everything is overpriced even during happy hour. Left hungry and unsatisfied. The wokaway drink was good but also expensive for a little drink in a short glass with lots of ice. Meh, don’t get the great reviews. Place is nice inside looking inside but thats about it.

I entered at 5P to a reasonably lit, empty, open bar for Happy Hour. Within minutes, manager twice dimmed the lights so low and dim that I could no longer read the menu without light from my phone. Lady who sat next to me at bar also had to get her phone out to read menu. Do you not want us to know what you have to offer ChoLon? There was absolutely nothing wrong with the level of light when I entered.

Amazing food and amazing staff. We came to Cholon for my birthday in early November and our server Gregory truly made our night with how fun and attentive he was. We came at the end of happy lunch and he made sure to get our order before it ended and when he didn’t come back in time to see if we wanted more he honored it. We ordered a good amount of food to split between our party and it was all delicious, and we thought it was funny the staff seemed impressed at our ability to put it away. Definitely a memorable birthday dinner, so much I’m leaving the review shy of 20 days later still impressed with the amazing service we had! Be safe and make reservations as we did see a few parties being turned away.

Went here for Denver restaurant week. Online it was very confusing. It stated it would be $35 per person for 3 starters, an entree and a dessert. Once we got there, they stated it would be $70 for two people and everything was to share. Starters were a reasonably sized portion but the entree to share, was enough for just one person.
