I constantly google BBQ near me and I never saw Rossler’s Blue Cord BBQ until one day they popped up in my search results. Which was such a coincidence because I live near where they park in Harker Heights and I never realized I was driving by a bbq truck, let alone a great one! Not even a great bbq truck, it’s just great bbq in general, better than most restaurants!

Had been wanting to try our Rossler’s for awhile and finally got the chance today and sorry it took me so long. I’ve been able to visit quite of few of the top bbq establishments in the area and Rossler’s can go head to head with any of them. Their food and service is amazing! We got the 3 meat plate (brisket, ribs, and turkey) with 2 sides (kale salad and cheesy poblano grits). The brisket was outstanding! Incredible bark, great flavor, and cooked perfectly. In my opinion in Texas, you judge a bbq place by their brisket first and Rossler’s blew me away. The ribs and turkey were great too but no doubt I’ll get some brisket every time I come back. The kale salad was good but the grits were next level. I didn’t know what to expect but they were fantastic. If you are getting multiple sides, start with the grits and then go with what you like. You won’t be disappointed and I doubt you will be with any of the other sides. Only my first time and we’ve only tried 2 but both were good and I bet everything else is too. We also tried the peach cobbler and I don’t say this lightly, I think it was the best I’ve ever had. It was outstanding and I’ve heard a lot about the banana pudding so can’t wait to try that next time I go.

Been following Rosslers since I was active duty 7 years ago, and finally had the honor of meeting him and trying his food. Everything was absolutely incredible and full of flavor. Brisket was mouth watering, The Swancho Taco was an explosion of flavors, the jalapeño sausage was perfect, the Mac and cheese and Cole slaw were excellently done, and the banana pudding was delightful.

My friend Bob, and I drove down from DFW today. He and I have had samples of their food at festivals before but wanted to experience their full menu, during a normal service. Everything was fantastic. Meats, sides, and the spiced banana pudding were all out of this world. Owners are super nice, and friendly as well. We have travelled all over the state to eat barbecue, and Rossler’s is great destination for any Texas BBQ lover. Highly recommend.

Yall need to hit up Rosslers Blue Cord Barbecue. This BBQ Trailer is putting out some of the Best BBQ in Texas by some of the Best Folks you’ll ever meet!! Brisket, Ribs,Turkey and Cheddar Jalapeno Sausage were all on point. Great Collard Greens and Mouthwatering Cheddar Jalapeno Grits. You gotta get the Spicy Banana Pudding. OMG!! This place was ABSOLUTELY AMAZING sweet and tangy barbecue brisket that just falls apart and Mac and cheese that melts in your mouth . I’m from Cali and when I first came out here the first brisket I tried was bucees lol I know that ain’t it. But it definitely had me against bbq for a long time , I’ve since had a few other places but nothing has really compared to roasters

I’ve lived in TX for 40 yrs and have never tasted brisket as amazing as what Steven & Kristen produce at Blue Cord! The baked potato was cooked to perfection, the bark on the brisket was just right, extremely tender & juicy & the flavors were off the charts. Extremely friendly owners who make you feel like family. As a small business owner myself, I appreciate outstanding customer service & quality of products produced. The Rossler’s no doubt take extreme pride in the quality of food they produce. I can’t wait until they are opened next Wednesday. New favorite place to eat hands down! Keep up the excellent work. You both are killing it!
