The Prime Cut, which is the new name for what used to be the Latigo Grill, is under new management and it is absolutely amazing. The variety and the class of the food has increased dramatically. I loved Kenny, but the new owners / chefs, Liz and James, are adding a whole new level. The steaks are amazing and the biscuits and gravy are awesome. I’ve yet to find anything that wasn’t delicious. The people are super friendly. It is just the right combination of country and fine dining. Yes, it’s a restaurant at an equestrian facility. But I’ve never found better. In my opinion it is absolutely the best place in Falcon, Elbert, Peyton, and the surrounding area. Super impressed!

If you’re looking for homemade, cook to order, delicious food, look no further than The Prime Cut a Latigo (formally know as The Grill at Latigo)! Liz, the new owner and chief, and her husband make amazing weekend specials, and the traditional Latigo favorites…if you get a chance, try her homemade hummus, best I’ve ever had! Just a reminder, it is in an equestrian center so expect the atmosphere to reflect that:)

Worst meal in 10 years! Won’t be back. Wife’s biscuits n gravy were cold, she asked for the bacon to be on the side, it was stuffed in the gravy. My Omelette was good, had to wait and then ask for my potatoes then half of them were cold. Not that busy, about 1/3 of the tables were empty.

I really wanted to like this place since it has a new owner. We made the mistake of coming in from the lower level and walking up the interior stairs. The stairs look like they haven’t been vacuumed in months. How the staff and walk up and down those stairs and just completely ignore the dirt and debris is beyond me. I should have taken a picture. We were sat to eat overlooking those stairs and as we waited for our food, I couldn’t help but notice all the dirt on the floor under the center of the tables. There were cobwebs and dust on most everything on the walls and lights. I get that the resturant is attached to an indoor arena and people are ranchers and horse people that come in to eat, but it needs a deep cleaning. The food was the same as the previous owner and just ok. The prices did reflect the just ok grading. We won’t be back though because if the dining area is that dirty, I can only imagine the kitchen or behind the bar.

Excellent full service restaurant and bar without having to drive out of the black forest or Latigo Trails Equestrian Community. Comfortable Western ambiance makes this restaurant our family favorite! Hire more waitresses to handle the waves of happy patrons please!!!
