The restaurant was created by Chef Skyler McCallson and his wife Hannah who had met at a sushi bar in Denver, Colorado. Under Wraps was inspired by traditional Japanese cooking in Skylers studies and experience traveling the world. Was out getting my steps in when I stumbled on this place. I arrived right as they were closing but the owner welcomed me in. I absolutely loved this little spot, what a beautiful atmosphere. Try the fired Cauliflower, couldn’t recommend it more.

This place has a cool vibe with a huge bar, and nice murals on the walls. The portions are tiny, and traditional. Basically like going out for Japanese tapas. I thought I would like the wagyu way more than I did, but it was super disappointing. The pork belly skewers were good, but the salmon with chimichurri was the winner. It was worth trying once, but I probably wouldn’t come back.
