For Koi Fusion’s creator Bo Kwon, combining traditional Korean flavors with unlikely partners was really just second nature. The oldest child of two working Korean immigrants, Kwon grew up putting together tasty concoctions for after school snacks like Kimchi Grilled Cheese sandwiches, leftover Spaghetti with Bulgogi & Kimchi, or really “just whatever was in our fridge when I was hungry; left side was the parents’ side and right was our side” he says. And the Food Truck aspect? That came easily too. While working at a nightclub as a host in downtown Portland, Kwon frequented a nearby cart pod, where he chatted up cart owners and grew familiar with the whole process of operating in Portland’s booming cart scene.

Good fusion US-Korean Street food. The cheesesteak sub roll went down very well, the sauce was excellent. The tofu Korean bowl was good, especially the soft spicy tofu, but lacked a bit of finesse. Prices were quite high (around $10) for the portion size.

When it’s cold and fish cake soup is offered… GET IT!!! It is probably the best $2.50 you’ll ever spend. Hot, yummy, and a large portion. Served in a large cup with a skewer of various fish cakes. Just can’t be beat.

I noticed a guy eating what looked like a really good hotdog. It was actually a Korean cheese steak so I ordered it. It tasted delicious. It was very flavorful. Service was friendly. It was not very busy when I went during a weekday round 12:30 and we were able to get a table.

I hate fusion. Most of the time they turn out terrible. I love KOI! They are the best! Bulgolgi is perfect protein for tacos and burritos. Don’t believe me? Go try them yourself!

We had Beef Bulgogi Tacos at Koi Fusion Mississippi and it was amazing. The Korean Seasoned Rice, Slaw, Pico De Gallo, Bean Sprouts, Cucumbers, Cilantro, and your choice of Salsa in a Soft Corn Tortilla are a marriage made in Heaven. Creative combinations are what make Koi Fusion an exciting place to eat.

The food here is great… But they don’t keep reliable hours, they run out of things constantly, and the management is wildly uneven. This is actually one of my favorite food carts in Portland, but their inability to operate on any kind of predictable basis really ruins it for me. If they were reliable, I’d eat here several times a week, easy. I do want this cart to succeed, and I know they have had challenges (multiple break-ins and no response from PPB), but if the location is not viable, just close it.

As several reviews have already mentioned, the prices are dishonest. The board shows $9 for a burrito. $10 if you get beef, which was almost required since two other protein choices were unavailable. The total came to $12.50 instead of $10. The minimum tip is set to 20% so you’re looking at $15 out the door for just the burrito.
