Husband and wife owners – Kelli and Jason Kolich – are proud to bring authentic Neapolitan pizzas to Kansas City. What is Neapolitan style pizza? Five main components make up a Neapolitan pizza:
1) The crust is hand tossed, thin and comprised of only 00 flour, salt, water and yeast.
2) The sauce is crushed San Marzano tomatoes.
3) The cheese is fresh fior di latte mozzarella.
4) Each pizza gets a drizzle of extra virgin olive oil to enhance the flavor.
5) Pizzas are cooked in wood-fired hearth ovens that reach temperatures in excess of 1,000 degrees. That means they cook fast, like 90 seconds fast.

Went out with my family for a quiet dinner. You order to the right when you know what you would like. We had skimmed the menu before but it took a little to figure out what sounded good to try. When you are ready you have someone fill out a card and you take it to the register and order your food and drinks.

We order pizza from 1889 regularly. Disappointed they left the prosciutto off my to go order tonight. When I called, they clearly gave 0 eff’s. “Sorry for your inconvenience and awkward silence. Would have like to have gotten paid back for at a minimum the cost of the prosciutto that I paid for and didn’t receive.

Everything about this place was amazing! Food, service and atmosphere! The chopped salad was fresh and flavorful. The bruschetta was tangy and delicious. The meatball was gigantic and tender. The fried egg on top was surprisingly good! The butcher block pizza was very tasty! The thin crust complimented the toppings perfectly! Definitely wanna check this place out!

Came in right at 3 as they opened and we felt a bit awkward. The staff sort of stared at us and then we felt hurried along by the girl who took our order. Food was fantastic though!! Pizza Margherita was sooo great. It was thin and crispy with the perfect amount of sauce. Greens salad was delicious too, if a little overdressed. Partner had the Butcher and said it was perfect. There was enough that we both took two slices home.

I ordered a pizza for my girlfriend and I l. When I picked up my the food, I was quite displeased to find out that their pizzas are single serving. I would have gone elsewhere had I known. Their website conveniently leaves out the details of the size. For $20+ I assumed it was a normal size pizza. Shady business practice.

A great local Neapolitan pizza spot. We’ve been here 6-7 times and most recently spent our Valentines day here for a special event they hosted. They are normally closed on Mondays, but since it was Valentines they had a special event for couples. Each couple received an appetizer, a glass of champagne, a bottle of wine (red, white, or rose), a salad, two pizzas, and a dessert! The best part was that we were able to make the pizza ourselves. The dough was pre-made (it does need to proof after all), but then they showed us how to shape it and then we topped it before they fired it in the oven. A great and different way to spend Valentines day. The staff was kind as always!
